The coals are banked

The brisket is cooked indirectly over mesquite charcoal for about four hours.


  1. I'm quite a carnivore and I need to try this sometime.

  2. I'm beginning to feel peckish - but remember, Skip, I prefer my beef well done.

  3. Stephen - It's well worth the effort... and the wait

    Brian - it's barbecue... real barbecue, meaning it's always well done... and in this case done well.
